Chicken Piccata

Last night I was craving chicken and i wanted to do something different…  So i looked up some recipies and found this one by  Giada

  • 2 skinless and boneless chicken breasts, butterflied and then cut in half
  • Sea salt and freshly ground black pepper
  • All-purpose flour, for dredging
  • 6 tablespoons unsalted butter
  • 5 tablespoons extra-virgin olive oil
  • 1/3 cup fresh lemon juice
  • 1/2 cup chicken stock
  • 1/4 cup brined capers, rinsed
  • 1/3 cup fresh parsley, chopped

Directions

Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.

 

In a large skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Melt 2 more tablespoons butter and add another 2 tablespoons olive oil. When butter and oil start to sizzle, add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate.

 

Into the pan add the lemon juice, stock and capers. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley.

8 Weeks Starting today

I Have about 8 weeks  till I head back to Kuwait …. My Husband and I have set a Goal of 10 Kilos  to lose starting today till a few days before we leave .

We have decided that we will not but any new clothes for the trip till the last few days.

We will cut out fast food, desserts, snacks

We will cut down on late night dinners and CARBS

We will work out ….and that means running every day and i am going to do hip hop abs for 30 mins a day.

1 cup Orange Juice + 1 Cup Low Fat Yogurt

 

Lunch: -

Rusk with 1 slice cheese + Tea

 

Lunch: -

Rusk + 1 Cup Fat Free Milk

 

Lunch: -

Fruits

 

Lunch: –

1 Slice Bread+ 3 Eggs

 

Lunch: -

Free

 

Lunch: -

Grilled Meat + Low Fat Yogurt

 

Dinner: -

 ½ Grilled Chicken + Green Salad + Steamed Veggies

 

Dinner: -

Grilled Fish + Green Salad + 4 Spoons Rice

 

Dinner: -

Grilled Meat + Salad + 4 Spoons Rice

 

 

Dinner: -

 1 Slice Bread + Yogurt

 

Dinner: -

Grilled Chicken + Salad + 4 Spoons Rice

Out Of The Mix

I know i have been out of the mix for a while… I had a lot of things going on with family coming in an out of town, looking for houses, work and so on.  I feel like i have been going and going and going in all different directions.

All is good now and I am back and better than ever!

Weight Loss Diary

So I have gained so much weight I think that I am at the heaviest I have ever been.

I don’t even want to share the number :(    I am so sick of myself, and I am finally ready to make a change.

NO Chocolate

NO Candy

NO Junk Food

NO Carbs after 7 pm
